Green Tea Muffins

I haven't been updating my blog - it's been a busy December and I cooked plenty of stuff, went to a couple of potlucks but I never seem to take photos of what I cook! Guess I didn't want to get my messy hands on my digital camera.

Here's a Fusion dessert recipe: Green Tea Muffins.



GREEN TEA MUFFINS (makes 12)

2 cups all-purpose flour
2/3 cup sugar (I lowered it since the original recipe seemed to be too sweet)
1/2 teaspoon baking soda
1 tablespoon bakable green tea powder (matcha) - if you love the green tea flavour- you can add an extra TEAspoon.
1/2 cup milk
1/2 cup butter softened
2 eggs
1/2 cup golden raisins (you can sub this for 1/2 cup of chocolate chips or chopped pistachio nuts)
1. Preheat oven at 350 degrees F and grease muffin tins or line with paper or silicone cups.

2. Sift together flour, baking soda, and green tea powder and set aside. (Make sure the green colour is evenly distributed)

3. In a large bowl, beat the butter until light.

4. Add the sugar and eggs and beat until light and fluffy.

5. Add the dry mixture and milk.

6. Stir or mix on low speed until the dry ingredients are just incorporated (don't over mix).

7. Add in the raisins or other stuff and mix gently.

8. Divide the batter among muffin tins

9. Bake for 20-25 minutes on a 180 degree Celcius oven until a tester inserted in the middle comes out clean.

10/ Cool on a wire rack.
