Avocado Ice Cream

Here's a recipe for Avocado Ice Cream - I am still researching making Green Tea ice cream using Avocadoes, replacing the eggs in the recipe - wondering if avocados would affect the flavour.

Usually Green Tea ice creams use artificial flavourings to get that green colour. Substituting the eggs wih avocados would give the green tea the natural green colour and also adds lots of health benefits. Just concerned only with the flavour of the green tea. Will only find out if I tried it. If anyone else has attempted it, please post your comments. For now, here's the easy recipe for Avocado Ice Cream

1 large avocado
2 tablespoons orange or lime juice
2 eggs, separated
1/4 cup sugar
1 cup heavy cream

Peel and roughly chop the avocados. In a blender, combine the avocado, orange juice, and egg yolks, and blend to a fine puree.

In a medium size bowl, beat the egg whites until stiff and whisk in the sugar, 1 teaspoon at a time.

In a separate bowl whip the heavy cream until it forms peaks. Gently fold in the egg white mixture and the avocado puree into the whipped cream. Pour the mixture into a freezer tray, cover, and freeze for several hours.

To serve, scoop out into a dish and garnish with whipped cream or fruit.

  3. I'm a big fan of green tea, and I was eating an avocado today, when I realized that avocado tastes a lot like an smooth green tea, especially Japanese green teas, which have a more pronounced plant-like quality. I thought about what they would taste like together, which brought me to Google, which led me to your blog.

Avocado green tea ice cream sounds fantastic, especially with the green tea powder (which I consume voraciously).
